1. The Cultivation in Bihar's Ponds
The journey begins in the stagnant, nutrient-dense ponds of the Mithila region in Bihar, India. The Euryale Ferox plant grows huge, thorny lily-like floating leaves. Beneath the surface, the plant produces bright purple flowers that eventually transform into spongy fruit.
As the fruit matures, it bursts open, scattering hundreds of seeds coated in a jelly-like substance across the pond floor.
2. The Harvest (A Test of Endurance)
Harvesting Makhana is arguably one of the most difficult agricultural processes in the world. Local farmers dive deep into the muddy waters—often holding their breath without any specialized equipment—to meticulously sweep and gather the heavy seeds from the thick mud. This requires immense physical endurance and unparalleled skill passed down through generations.
3. Sun-Drying and Cleaning
Once harvested, the black seeds are washed repeatedly to remove the thick mud and jelly coating. They are then laid out under the intense Indian sun for several hours. This crucial drying phase forces the moisture out, shrinking the seed kernel away from the hard black shell, preparing it for the popping phase.
4. The Art of Roasting and Popping
The magic happens here. The dried seeds are separated by size to ensure even heating. They are then roasted in enormous cast-iron pans over high heat. The timing must be perfect—just a second too long and the kernel burns.
Once heavily roasted, the hot seeds are rapidly transferred to a flat surface where highly skilled artisans strike them individually with a heavy wooden mallet. The intense heat combined with the sudden structural shock causes the hard shell to explode, birthing the massive, fluffy white "Phool" (flower) Makhana we know and love.
